sweet and salty

Outdoor Education for the Mr. has officially started! I am so excited to hear all those funny stories about kiddos and wild animals. I have to admit, I am excited to meet everyone but more then anything, I cannot wait to bake more! There is no reason to bake without mouths to feed and we hate being forced to eat all those baked goods, just the two of us. Now we can share and the first week of OE has been no exception. 


Today I made these delicious cookies. They were sugary on the inside and salty on the outside. I highly recommend them if you like that sweet/salty thing. 

Last weekend I threw a baby shower for our dear friends, Nick and Joy. It was for camp friends and it was a blast. I always feel awkward being a hostess. I love the preparing and cooking but the whole games and entertaining is not my best asset. But none-the-less, it was a fabulous time and I had some good old quality chill time with Nick Joy and Steph afterwards- in comfy clothes none the less. 

Something special happens when your closest friends have a baby. This will be my second best friend that is having a baby and it makes me so excited! Excited for them and for me. It makes me look forward to the day when the Husband and I are ready for kids- which is not now. But one day.








As always, I love a good visit with my favorite Peterson girls (Kirsten not pictured). I miss them!

the three stooges

A few weekends ago, we had visitors. I just adore visitors. I try to make sure the bathroom is extra clean and that we have their favorite foods for breakfast. Isn't it nice to have people who you rarely see sharing your evenings with you, eating with you, playing games... I enjoyed every minute. 

Seth, Turner and Nikki spent a weekend with us. We went to opening night of trivia and lost, played lots of games, went to the Rock and Rocky Mountain National Park, visited the Historic Stanley Hotel and went on the New Belgium Brewery Tour! Mainly, we just hung out. I have to admit, one night the guys played games while Nikki and I watched Mrs. Doubtfire-talk about old school. It was so much fun! And when these three roommates (Kevin, Seth, Turner) get together, it's like they never left college. Like they still live together and have no worries. It's adorable but give it a week, I would go bonkers. 

All in all, it was such an awesome weekend and we can't wait till they all visit us again. It's like living a weekend in college mode with your closest friends!

On the right, not even kidding you, at the Stanley (inspiration for the scary movie, the shinning), they have a monitor that plays photos taken at the Stanley that have ghosts in them, kinda like a haze. It's creepy.

Lumpy Ridge

Ohhh my what a beautiful day in the mountains. I worked last night and as I awoke from my sleep, approx. 2 pm I was upset. I discovered I had missed the best part of the day but then God smacked me around a little, because really, I could have worked a day shift and not even gotten off until 630 pm. How horrible that would have been. Thankfully my husband had exciting plans for us and together, we can just have so much fun without even knowing it. hah

He got home around 330 and we took a bike ride. Ohh it was lovely. We would love to teach Callahan how to ride along side our bikes so we practiced. He did so well but he didn't bike with us the whole time.  In Estes, we have awesome walking/biking trails all over the town. We went the back way and this picture below is of lumpy ridge. When you live somewhere, you kinda forget about the beauty around you, especially lumpy ridge because I see it everyday but when you are out in nature and see it from a different angle, it is spectacular. Today made me so excited for summer and bon fires, smores (for the life of me, is this how you spell this?) and rock climbing. And all the hikes we have yet to discover.

Anyways, we biked down to town and stopped at Eds Cantina- a staple in Estes that has been around for years and I love it. The have the best happy hour with margaritas and nachos. Yum. We tried to bike home, uphill and stopped by Carlie and Daves who were getting ready to visit Daves parents "mini-farm" with horses and chickens and even ducks. It was a blast. One day we want these things, well minus horses. Cheers!
